Welcome back to another post all about baking! I’ve really been enjoying the opportunities I’ve had to dessert bake for events lately and I’m excited to share another recipe with you. I have not had a Blondie in years and I used to love them before I had to start eating gluten-free. However, a few weeks ago, someone requested that I make gluten-free Blondies and this recipe was super easy and so delicious. Enjoy!
Gluten Free White Chocolate Blondies
I made this recipe into Blondie Cupcakes–made about 12-14.
2 cups of sugar
2 cups of all-purpose gluten-free flour (I used the Krusteez blend)
1 teaspoon of salt
1 teaspoon of vanilla
1 cup of butter
4 eggs
2 cups of white chocolate chips
Melt the butter and half of the chocolate chips in the microwave or on the stove, stirring often. Set aside and let cool.
Beat the eggs, sugar, and vanilla in a mixing bowl. I like using an electric mixer if it’s available to beat this mixture, just because everything tends to be more light and whipped. But a regular whisk works just fine as well.
Mix in the melted white chocolate/butter mixture, flour, and salt and stir until all are combined. After all mixed together, fold in another 1/2 cup of the white chocolate chips.
Pour into cupcake liners/pan and sprinkle with the remaining white chocolate chips.
Bake at 350 degrees for about 30-35 mins, check with a toothpick after 30 mins and if it comes out clean, the Blondies are done.
