Happy Monday! I hope you had a great weekend and were able to get lots of rest! We had an uneventful weekend, which I absolutely love. It’s been pretty cold in Oklahoma the last two weekends, so I love staying inside and staying home if at all possible. Sundays are the days that I typically get house work, meal planning, and food shopping done. I was able to shop for all of our groceries yesterday and that was a huge help!
When we meal plan each week, we typically pick 3-4 recipes to make and then will eat them for leftovers on some nights. I also only shop for the ingredients to make these recipes, which helps us to not throw away food before it goes bad. We have found several recipes that we keep on rotation and I would like to share some of those with you! Chili by Delicious Meets Healthy— My husband made this recipe about a month ago and I think it’s our new favorite chili recipe. There is a unique secret ingredient, but it makes it super delicious! This recipe takes about an hour and a half to make, but paired with some cornbread, it’s so worth it! This recipe is gluten-free.
Spicy Garlic Lemon Butter Shrimp with Corn Polenta by Half-Baked Harvest— I love so many recipes from Half-Baked Harvest! This is a great recipe to make if you have some fresh or frozen shrimp. We made this recipe a few weeks ago and it was the perfect thing for a cold night and we weren’t in the mood for soup. This recipe is gluten-free.
Paleo Pizza Crust by Paleo Running Momma— This is my favorite gluten-free pizza crust recipe that I’ve attempted to make. It’s super quick to mix up and also to bake. I typically bake the crust for around 20 minutes before I add the toppings and bake for a few more minutes. My husband also loves this recipe!
Gluten-Free Baked Mac and Cheese by Sweet Rustic Bakes— I have made this recipe sooo many times since I found it! It’s the perfect recipe to take to family dinners, holidays, or to make just because. It tastes devine if you add gouda cheese and the potato starch is the famous ingredient to make this recipe even better! This recipe is gluten-free.
Gluten-Free Country Sausage Gravy by Self Proclaimed Foodie— This recipe is amazing over biscuits on a weekend morning or if you’re craving breakfast for dinner. I have made this recipe with almond milk and regular milk and both are delicious. This recipe is gluten-free.
